ORANGE CHIFFON CAKE

Ingredients:
Flour 56gm
Sugar 75gm
Baking powder 2.5gm
Salt 1gm
Oil 27gm
Egg yolk 32.5gm
Egg white 75gm
Orange zest 6gm
Orange juice 45gm
Vanilla 1 tsp
Method :
• Take half of the sugar and rub the freshly grated orange zest in it, till the sugar gets moist.
• In another bowl combine the egg yolk, half part of sugar rubbed with orange zest and vanilla and whip this mixture till frothy.
• Add the orange juice and whip again.
• Mix the baking powder and the salt to the flour and add this one spoon at a time to the egg mixture.
• Mix at lower speed and then add oil into the mixture and emulsify the batter.
• In another bowl, start whipping the egg whites till foamy.
• Add the remaining sugar gradually and make smooth and soft peak meringue.
• Then combine half part of egg yolk mixture and egg white mixture. Now repeat and incorporate the 2 batters completely.
• Pour the batter in a round tin (6 inches) and bake it at 160 degree for 30 min.
• Once the cake is completely baked, turn the cake pan upside down to avoid sinking the cake from middle.
• Let it cool completely.
• TO SERVE: Dust the cake with powdered sugar and decorate with oranges.
